How does freeze drying work?

How does freeze drying work?

Freeze drying uses a process called sublimation. Here's how it works:

1. Foods are placed in the freeze dryer where they are frozen to between -30 degrees and -50 degrees F.

2. Once frozen, the freeze dryer creates a vacuum in the food chamber.

3. As the food is gradually warmed, the water turns to vapor and evaporates out of the food.

4. This turns the food crunchy instead of soft and chewy.

Freeze dried treats are a new way to enjoy your old classics with a new texture.
